Featured Food: Fish in Foil

I frequently make “Fish in Foil”, a quick and easy dish that can be prepared in the oven or on the BBQ. It is easy to prepare and always light and tasty.

First, put 1 tbsp olive oil on a large foil. Then place the fish on the foil. You can take any fish really, I often go for salmon, tuna or tiliapia because they are readily available and can be stored in the freezer.

Now top the fish with a variety of vegetables. I like to go for tomatoes, mushrooms, shallots and peppers (and some tomato sauce) but it’s fun to experiment with leek, olives, carrots, sugar snaps, depending on what’s in season. To be honest, I mostly use what is left in the fridge at the end of the week…

Sprinkle with salt, pepper, garlic, herbs, some (pine) nuts and lemon or lime juice. Close the foil and put the packages on the BBQ for 10-15 minutes or in the preheated oven (200 degrees C) for 20-25 minutes. Serve with bread, rice or jacket potatoes and a good glass of wine!
